today at lunch i reached perfect culinary equilibrium. i think i found the supreme balance between sauce and rice. dont be fooled, this is no easy task. Everyday for lunch, we eat rice and dahl with some other assorted vegetables in the office. Its served family style, so you serve your own portions. This means its all on you to get the ratios right, which comes with a bit of a learning curve. Eating is done also solely with the hands, so you can go with the pre-mix option, or mix each bite of rice with a small sampling of dahl. I personally go with the pre-mix, so I have a whole plate of rice-dahl all mixed and ready to be eaten.

So after 3 or 4 meals when I first got here and a newfound smugness, I thought I was a pro. But I realized just today that the perfect balance of rice and dahl is not easily attained, but when it is, it. is. so. choice. I’m not sure what prompted it or how I got there, to be perfectly honest I think I blacked out. Perhaps there is some mythical order of operations involving exponents and parenthesis where you spoon the rice first, stir the curry twice, then gently ladle counter-clockwise for no less than 13 seconds. The world may never know, but I can’t under-emphasize the importance of the rice:dahl ratio. Its imperative in making the meal. too much and its quite soupy. Too little and it feels like you’re eating plain white rice. just in the middle is tasty, but when you really dial in on the right almagamation, there is this intangible delectableness mutliplier of 1,000x.
So I’ll continue on my quest to figure out this secret mixture of deliciousness as I become more adept and look less and less foreign when pawing food into my mouth sans silverware.
